Last summer, as my husband and I prepared to live aboard and cruise on our sailboat for several months, I sought out healthy, easy recipes to take along. Below is my adaptation of a recipe I found in a magazine from my insurance company. We love this oatmeal! It’s easy, ready when you are, and refreshing. Now we eat it when we’re not on the boat. Hope you enjoy!

Ingredients (4-5 servings)

2 – cups uncooked oatmeal
2 – cups filtered water
1 – Granny Smith apple, chopped
1 or 2 – handfuls of Craisins or raisins
1 or 2 – handfuls of walnuts, almonds or pecans (chopped if you like)
1 – Tablespoon lemon juice
1 – squeeze of a honey bottle (adjust to taste)
1 – teaspoon cinnamon

Stir all the ingredients together in an air tight container. Put in the refrigerator overnight, and give it a stir before you dish it up in the morning. Serve with milk or yogurt. (Keeps in refrigerator for several days. It’s never lasted long enough to know exactly how long it can be stored.)

You can try adding different fruits and combinations. Try pear and walnuts, or add some pineapple and coconut for a tropical theme. Enjoy all the heart healthy foods and great taste!  (If you come up with a good combination, let me know and I’ll add it to the website.)
